Actually i wanted to know as in when i have allocated manhours/resources to all the activities, how can i know about the earned values/consumption rates

Load your resources in Resource Dictionary , then allocate it in your selected activity.
In your second query, about the earn value. this concept is base on performance index of your work , for me this earn value analysis is the best way to track progress wherein you are using the common denominator of all units.
